This a basic risotto alla Milanese. First, we saute the shrimp in olive oil with salt, pepper, and paprika and set it aside. Then, saute the mushrooms and set aside. Saute the diced onion and celery, add the arboreal rice, and cook. Slowly add the chicken broth, about half a cup, stirring continuously until the rice is almost done. Add the Parmesan cheese, a little butter, the shrimp, and the mushroom. Serve with spinach.
